What Is Honey Process Coffee?

Honey processing sits between washed and natural approaches. After harvesting, the coffee cherry skin is removed while some of the sticky fruit layer surrounding the seed remains during drying. Producers can manage the amount of fruit material, drying speed and fermentation conditions in different ways, which is why honey coffees can vary widely in sweetness, body, acidity and fruit character.

Flava’s collection includes more than one interpretation of the process. Costa Rica Tropical Bridge uses a black honey process, while Costa Rica Forbidden Fruit and Uganda Flora combine honey processing with anaerobic techniques. Honey-process coffees are often associated with pronounced sweetness and a rounded texture, but the final flavour depends on origin, variety, fermentation and roast.
